Coconut Granola

A coconut based granola recipe that is easy to make and is a grain free sub for regular breakfast cereals.

Serves: 4+

Ingredients

  • 2 cups coconut chips
  • 1 cup of nuts of choice (I like a mix of cashews, sunflower seeds, pumpkin seeds and pecans)
  • ¼ cup maple syrup OR ¼ cup honey
  • ¼ cup coconut oil
  • optional: vanilla (1 tsp) , cinnamon (dash) , chia seeds, raisins or other dried fruit of choice (up to ½ cup)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Melt coconut oil, honey/maple syrup in a small saucepan until starting to bubble and simmer.
  3. Add vanilla if using.
  4. In a large bowl, mix the coconut chips and nuts and any optional ingredients if using.
  5. Pour honey/maple syrup/coconut oil mixture over the dry ingredients and mix well. The consistency will vary some depending on the honey, coconut chips, and coconut oil you use. If there is not enough of the honey mixture to lightly coat all of the ingredients, add slightly more melted coconut oil and honey in equal parts.
  6. Spread on a parchment paper lined baking dish.
  7. Bake for 15-20 until starting to brown.
  8. Remove and let cool, then crumble into granola pieces.
  9. Store in an airtight jar and use within two weeks.

Egg, Avocado & Cucumber Bowl

chop 1 hardboiled egg, half avocado, half cucumber, handful of cherry tomatoes and mix together with salt & pepper.

Add chicken or tuna. Other mix-in ideas: hemp seeds, cayenne pepper, salsa, jicama, kale (add lemon juice to kale)

Ingredients

  • 1 large head of cabbage (red or green)
  • 3 tbsps of extra-virgin olive oil
  • 5 cloves of chopped garlic
  • Pink salt and black pepper to taste

  • 1 large head of cabbage (red or green)
  • 3 tbsps of extra-virgin olive oil
  • 5 cloves of chopped garlic
  • Pink salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 F.
  2. Brush both sides of each cabbage slice with oil.
  3. Spread the garlic evenly on each side of the cabbage slices, and season them to taste with salt and pepper.
  4. Roast in your oven for 20 minutes; then turn the slices over and roast them again for another 15 minutes or until the edges are crispy.

Chocolate Nut Butter Energy Bars

Ingredients

  • 1 c dried fruit
  • ⅓ c nut butter
  • ⅓ c maple syrup
  • ½ c coconut flakes
  • 1 T chia seeds
  • 2 t flax seed meal
  • 1 T hemp seeds
  • ¼ t salt
  • ½ t vanilla
  • 2 T raw cacao powder

Instructions

  1. Place all ingredients in food processor and blend until a ball forms.
  2. Using a muffin tin (mini or regular) scoop enough dough to fill the wells and flatten with your fingers
  3. Place in fridge until hardened (about an hour) then store in an airtight container for a week or two.

guacamole – HEB has a pre-made version that’s clean. Read the ingredients and make sure it’s just avocados and veggies with lime/garlic, etc.
