• 2 handfuls of kale, ribs removed
  • Juice of one lemon
  • 1T olive oil
  • salt & pepper to taste


Put all ingredients together and let sit in the fridge for at least 30 min. I mix it and let it wait in the refrigerator over a few days and eat it as hunger strikes.  Then the creation begins. When I pull the kale mixture from the fridge, I add any of these for protein:

  • bits of chicken
  • beans
  • lentils
  • fish (tuna or salmon)
  • turkey
  • steak
  • hard boiled eggs

Then I add a fruit:

  • watermelon
  • kiwi
  • dried cranberries (watch the added sugar!)
  • blackberries
  • oranges
  • grapefruit apples
  • pear
  • apples

And I top it with:

  • nuts
  • hemp hearts
  • slivers of cheese
  • flax seeds
  • sunflower seeds
  • avocado

Option: You can add cold grilled veggies to the kale mixture or beets, carrots, fresh tomatoes, cucumbers, bell peppers. If I add extra veggies I usually leave out the fruit or eat it on the side.

I find this salad has enough flavor with the lemon that I don’t need dressing. But add it if you like.  I can usually make 3 meals from this and they are all different by just changing the ingredients.
